Why convert MP4 to MP3?

Quality and file size

There's a small quality loss because the original MP4 contained AAC audio, and we're re-encoding it to MP3 (both are lossy formats). At 192 kbps or higher MP3 bitrate, this loss is inaudible to virtually all listeners. The audio is otherwise preserved exactly as it was in the video — same length, same sample rate, same channels.

Will the audio quality be the same as the video?
Almost identical. There's a tiny re-encoding loss going from AAC to MP3 but it's inaudible at standard bitrates.
Will it work with any MP4 file?
Yes, as long as the MP4 contains an audio track (the vast majority do).
Can I get higher quality than MP3?
If you need lossless extraction, convert to WAV or FLAC instead of MP3.
